Bacon Wrapped GOOSE BREASTS
with CREAM CHEESE, JALAPENO, and water chestnuts.
1 Lg. Can or jar pickled Jalapenos
1 - 8-oz Cream Cheese Block (Not spread)
1/2 lb. Thick-sliced, Peppered Bacon
1-2 lbs. Goose Breasts
Trim fat and membranes from goose breasts. Cut goose breast thin…..1/4-3/8” thick. Place breasts in Jalapeno vinegar and refrigerate for 4-6 hours (overnight is best).
After marinading, remove breasts from juice (juice can be re-used for same purpose if kept cold), lay breast out flat, cut slices of cream cheese off brick and lay in center of breast, top with 2 slices of jalapeno and/or add a water chestnut.
Roll breast around cheese & jalapenos. Wrap with a slice of bacon and secure with long toothpicks.
Grill over medium-high heat, turning often. Cook approx. 10 minutes or just until the bacon is crisp.
Makes great appetizers or a meal.
